Iced Coffee (the efficient version)

I think I first fell down the iced coffee rabbit hole when I was working at McDonald’s in high school. I LOVED working the 5:00 am shift for a myriad of reasons, and I was also duel enrolling at the local community college. My managers would let me work the back drive through (where they take your order and your money) so that I could study in between customers. My brain felt overloaded for much of that period of my life, so I was often fueled by coffee.

Okay, not much has changed.

Homemaking, Motherhood

These are a few of my favorite things!

It doesn’t matter if it’s huge or tiny, we all have to have our favorite things to get by. Here are my top things (some Mom-related, some not) that are getting me through a fairly stressful period of time right now!

Sausage Balls: The Breakfast of Busy Moms (and preschoolers)

It’s been a while since any new content has shown up here! Low Carb Chocolate Chip Coffee Muffins

Chocolate chip coffee muffins. Muffins. With chocolate chips. That taste like coffee. I literally don’t see a single thing wrong with this scenario.

A dear friend of mine and I both LOVE these muffins; I try to keep her supplied with a freezer stash of them… you know, in case of emergency (ie, when her kids haven’t stopped talking to her in 10 hours and she needs to lock herself in the bathroom with something sweet). Today is her birthday and normally I would just whip up a big batch and bring them to her… but she has recently started eating the Trim Healthy Mama way, and has been very successful with it. I didn’t want to derail her – both she and her husband have made awesome progress eating on plan! Continue reading “Low Carb Chocolate Chip Coffee Muffins”

Peppermint Mocha (sugar free, yet delicious!)

I have a serious coffee problem. Like a real one. Anyone who knows me well knows this.
But there is a difference between a regular old “cup o’ joe” and special coffee.

The regular cup of coffee is the one that you throw together first thing in the morning. The one you desperately brew and burn your mouth on because you were too frantic to take the first sip slowly. The one you try to enjoy as your various children cling to your pajama pants and beg for “meelk”, of either the chocolate or breast variety.
